Rosemont’s Parkway Bank Park entertainment district will welcome Nisi Greek Grill this October, expanding the district’s diverse dining offerings with a modern expression of the Greek islands. Located at 5509 Park Place in the former Saltwater Coastal Grill space, Nisi is the newest concept from Forte Hospitality, the Chicago restaurant group behind Sapori Trattoria and Butcher & The Bear. The new restaurant, co-founded and led by partners Kosti Demos, John Lawson and Chef Saul Ramos, will bring together the flavors of land and sea with elevated Greek cuisine, fresh seafood, premium steaks and seasonal ingredients.
Inspired by the beauty of the Aegean and the warmth of Greek hospitality, Nisi Greek Grill will offer a contemporary take on Greek dining rooted in the traditions, flavors and hospitality of the Greek islands. At the culinary helm is Executive Chef Saul Ramos, who also serves as Culinary Director for Forte Hospitality’s Sapori Trattoria and Butcher & The Bear. Ramos will bring a modern approach to Greek cuisine, combining traditional flavors with seasonal ingredients and contemporary techniques.
Menu highlights will include tableside flaming Saganaki and Youvetsi Mac & Cheese, featuring braised lamb shoulder and Kefalograviera cheese sauce. Main courses will include a Wagyu & Lamb Tasting Board, featuring three cuts of Wagyu and a lamb cut, along with Beef Cheek Pasta with pappardelle and Mizithra cheese and Avgolemono Risotto served with a grilled harissa prawn.

Nisi’s design will combine Greek-inspired details with the rich, polished feel of a modern steakhouse. A navy, cream and warm wood palette will be accented with gold finishes, while Greek stone behind the bar, laurel wreath details and a wings-inspired photo wall will add Greek elements throughout the space. Nisi partner John Lawson, who brings more than 25 years of experience in construction and design, helped bring the restaurant’s warm, welcoming and refined atmosphere to life, drawing on his experience building neighborhood restaurants and homes across Chicago. The restaurant will feature a 150-seat dining room, an 80-seat patio for warmer-weather dining and a semi-private dining room accommodating up to 60 guests for corporate dinners, birthday celebrations and other special occasions.
Nisi will also feature a dedicated back entrance providing access to a café-style takeaway area with coffee, Greek frozen yogurt, Greek-inspired desserts and other quick options for guests looking to enjoy Nisi on the go while exploring Parkway Bank Park. Once open, the restaurant will also host live music and Greek island-inspired celebrations.
